Chicken Breast with Avocado-Tomato-Basil Salsa (Serves 1)
Ingredients:
1 boneless, skinless chicken half, pounded thin
1 tsp olive oil (divided)
1 garlic clove, minced
1/2 medium avocado, diced
7 cherry tomatoes, quartered
3 basil leaves, chopped
1 tablespoon fresh lemon juice
1/2 tsp balsamic vinegar
salt & pepper
Directions:
Coat a nonstick frying pan with cooking spray.
Brush the chicken breasts with 1/2 tsp of the olive oil and the minced garlic.
Cook the chicken over medium-low heat, 5-6 minutes a side, or until slightly browned and cooked through.
In the meantime, prepare the salsa. In a small dish, combine the avocado, tomatoes, basil, lemon juice, balsamic vinegar, salt & pepper to taste, and the remaining 1/2 tsp of olive oil.
When the chicken is done, spoon the salsa on top.
Drizzle more lemon juice on top, if desired.
