Chicken Breast with Avocado-Tomato-Basil Salsa (Serves 1)

Ingredients:

1 boneless, skinless chicken half, pounded thin
1 tsp olive oil (divided)
1 garlic clove, minced
1/2 medium avocado, diced
7 cherry tomatoes, quartered
3 basil leaves, chopped
1 tablespoon fresh lemon juice
1/2 tsp balsamic vinegar
salt & pepper

Directions:

Coat a nonstick frying pan with cooking spray.

Brush the chicken breasts with 1/2 tsp of the olive oil and the minced garlic.

Cook the chicken over medium-low heat, 5-6 minutes a side, or until slightly browned and cooked through.

In the meantime, prepare the salsa. In a small dish, combine the avocado, tomatoes, basil, lemon juice, balsamic vinegar, salt & pepper to taste, and the remaining 1/2 tsp of olive oil.

When the chicken is done, spoon the salsa on top.

Drizzle more lemon juice on top, if desired.

Enter review here Clif PB&J Dipped Mojo: 3 Bites

The goods: Sweet, crunchy, and tastes pretty close like a PB&J, only much sweeter. I liked the texture - crunchy, chewy, and the PB 'dip' even provided some creamy!

The not so good: This may not be a bad for everyone, but this bar had 11g of fat - definitely a bit much for a bar, in my opinion. Also - although all natural, the color sort of freaked me out. It was bright purple.

Mountain Mix Clif Mojo Bar: 4.5 Bites

The good: I loved the sweet and salty combination of this bar! It was full of pretzels, raisins, almonds, peanuts, and chocolate chips. Sweet and salty, and full of healthy fats, protein, and carbs.

The not so good: It was just a tad high on on the fat content for me, but that's just me. I'm getting over it, because otherwise, I loved this.

Berry Almond Luna Bar: 4 Bites

The good: I really liked the balance of the berry flavor and the almonds. It was not too sweet, which many berry flavored things have the tendency to be. The bright purple color reflected the berries in it - exciting.

The not so good: My bar was rather sticky - much more so than the average Luna. Also, the flavor, at first strong, seemed to diminish as I ate it.

Caramel Nut Brownie Luna Bar: 4 Bites

The good: Very rich, chocolatey, and nutty. The caramel like topping on top adds to the richness of the bar.

The not so good: I just don't think that the chocolate Luna bars are as good as the non-chocolate flavors. To me, they have a strange, almost chalky aftertaste. But generally, I would chose a chocolate Luna bar a chocolate bar from another brand, any day.

Chai Tea Luna: 4.5 Bites

The good: I don't like wimpy chai tea - I like to be able to taste the spices. I like it strong. This Luna bar did not let me down! I could actually see the specks of spice in this bar - delicious. As always, the bar also provided a great spread of nutrition that satisfied for several hours.

The not so good: Um...

Chocolate Peppermint Stick Luna Bar: 4 Bites

The good: peppermint and chocolate are made for each other. Really. Some of the best things in the world are made of chocolate and mint. Love it.

The not so good: as with the other chocolate Luna bars, there was a strange aftertaste from the chocolate part. This one seemed a little drier than the other Luna bars, but paired with some almond milk, I didn't mind at all.

Chocolate Raspberry Luna Bar: 4.5 Bites

The good: I know I say that "chocolate + (insert flavor here) = winning combination" quite often, but once again, its true. I love chocolate and berry flavor together, and this had a nice balance between the two. I didn't think it was chalky at all, and it was not as sweet as I expected it to be.

The not so good: Its slightly lower in protein than some of the other bars (8 as opposed to 9-10 grams), and it has less fiber (1g) than some of the other flavors.

Cookies 'n Cream Delight Luna Bar: 4 Bites

The good: The first time I had this, I was having a major chocolate fix, and this helped. Its sweet, but not too sweet, and definitely hits the spot. I like the 'cream' dip and the chocolate bar.

The not so good: As with some of the other chocolate bars, this one tastes a little artificial and chalky. I was also a little thirsty after eating this one, but that might have just been me.

Dulce de Leche Luna Bar: 3.5 Bites

The good: The sweet caramel taste definitely reminded me of the Tres Leches cakes I used to eat when I was a child. This has the fewest calories of any Luna bar - 170.

The not so good: After a while, it became a little too sweet for me. Okay, quite a bit too sweet.

Iced Oatmeal Raisin Luna Bar: 4.5 Bites

The good: First of all, I absolutely adore everything oatmeal raisin. Unfortunately, many OR products contain walnuts, which I'm allergic. I was thrilled when this didn't! Its a wonderful bar - just like a cookie.

The not so good. My bar didn't have a single raisin.

Lemon Zest Luna Bar: 4 Bites

The good: I normally hate or strongly dislike citrus flavored things. I was very surprised when I bit into this and liked it. The bar contains both lemon juice and lemon puree, giving a very natural flavor.

The not so good: I liked this bar, but I think its a very summer flavor - I wouldn't like it in the fall or winter.

Nutz over Chocolate Luna Bar: 4.5 Bites

The good: I normally don't really like the chocolate flavored bars as much as I enjoy the non-chocolate ones, but I must say, this one is mighty fine. It blends PB and chocolate - a classic combination.

The not so good: There is a very mild chalky aftertaste. Very mild.

Peanut Butter Cookie Luna Bar: 4.5

The good: Holy peanut yum. This bar had a very strong PB taste, which is always a lovely thing. With the chewy and crunchy texture of the bar, the flavor seemed to be real - like an oddly crunchy peanut butter!

The not so good: It was a little sweet for my tastes - I'm used to natural PB without sugar. However, it was delicious, so this was not much of a factor.

S'mores Luna Bar: 3.5 Bites

The good: I really enjoyed this more than I though I would. I never liked s'mores as a child. I don't know why - I love each of the individual ingredients alone, but not together.That being said, this bar was pretty good.

The not so good: As I said, I don't really like s'mores. I just don't. I think it they (including this bar) are too sweet.

Toasted Nuts 'N Cranberry Luna Bar: 5 Bites

The good: All the nutty, fruity goodness of a granola bar with exta proein, fiber, and nutrients a girl could want! These are great on their own, in oats, in parfaits... I could eat them in any possible manner. To me, they are the most natural tasting of the Luna series because there is no dipping or coating.

The bad: Depending on the bar, there is sometimes a lack of cranberries or nuts - but the taste is still there.

White Chocolate Macadamia Luna Bar: 4 Bites

The good: A classic combination - so good, and light, yet heartwarming. You really can't go wrong with these.

The not so good: it was very sweet, definitely a dessert flavor Luna. This is the highest fat/calorie (9g, 190 cal) bar of the set.

Blueberry Bliss Luna Sunrise Bar: 4 Bites

The good: I love almost all things blueberry, and this was no exception. I was surprised by the jam topping, but I did like it! It didn't taste exactly like blueberries, but the flavor was definitely there.

The bad: The sunrise bars are slightly lower in protein than the other bars, but as a breakfast bar, it was perfect. The only complaint I had was that it was a tad sweet after a while. Just a little.

Chocolate Chip Clif Bar: 4.5 Bites

The good: This was the first regular Clif bar I ever tried, and I absolutely loved it. It tasted just like a chocolate chip cookie. I highly recommend this to every chocolate chip cookie love out there - I would actually chose this over many a cookie.

The not so good: Um... it ended? I couldn't make it last forever. Sad.

Carrot Cake Clif Bar: 3.5 bites

clifbar.carrot cakeThe good: the Clif Bars always have a great texture, and provide a great amount of nutrition. I liked that I could see the individual pieces of carrots in this bar. It tasted almost like a real piece of cake, but not quite right.

The not so good: I think it was because I ate it during a hot day, but the spices in this bar were too warm for me - I didn't fancy it. However, I'll give it another try during the fall. I'm generally a huge fan of Clif, so I hope it comes through.

Blueberry Crisp Clif Bar: 4 Bites

The good: I am a huge blueberry fan - I can just sit and eat a carton of them, no probs. The fact that the bar had big chunks of blueberries made me a fan. I loved the flavor of this one - not too sweet, but still pleasantly desert like.

The not so good: The only thing that I didn't like was how sticky it was - it seemed more gooey than the other Clif bars I've tried. Maybe its the fruit?

Chocolate Brownie Clif Bar: 4.5 Bites

The good: Clif wasn't lying with the title - this was basically a brownie in energy bar form... and I loved it. I don't really remember the last real brownie I had, and frankly, this bar makes me not care. It was delish - super chocolatey, not too sweet, and with the Clif Bar nutritionals, wins over a brownie anyday, in Emma land.

The not so good: beware of chocolate bits left in your teeth!

Crunchy Peanut Butter Clif Bar

The good: I loved this one... but it wasn't very peanutty to me. I wonder why. However, the oaty, crunchy, mildly peanutty flavor sent my tongue into some bar heaven somewhere. Definitely a plus.

The bad: After a few bites, it seemed to lose some of its kick.

Apple Cinnamon Clif ZBar: 4 Bites

The good: The taste of apples and cinnamon is one of my favorite combinations ever. The first bar of this bar totally satisfied that sweet and spicy craving.

The not so good: just as with the Honey Graham, the taste sort of lost its flavor ater a while.

Blueberry Crisp Clif ZBar: 4.5 Bites

The good: just like the Chocolate Chip flavor is a cookie in bar form, this is definitely a big ol muffin jam packed into a 120 cal, oaty, berryful far. Yummers.

The not so good: Just as with the cc, a little sweet.

Chocolate Brownie Clif ZBar: 5 Bites

The goods: its basically chocolate and oat heaven. Seriously. I have one of these almost everyday. They are sweet, but not too sweet, and they satisfy all of my chocolate cravings. And at only 120 cals a pop - you can definitely indulge in these babies.

The not so good: They only come in boxes of 6.

Chocolate Chip Clif ZBar: 4.5 Bites

The good: All the chocolate chip cookie goodness you could want in a natural, low fat (and calorie) form. Seriously - these are absolutely wonderful. They are a little sweeter than the Chocolate Brownie ones, hence the .5 bites less. But that's just me - I know a lot of people prefer them.

The not so good: Just a tad sweet for me. But still delish

Honey Graham Clif ZBar: 4 bites

The good: tastes just like graham cracker from my childhood. The super sweet, honey flavored ones that I used for s'mores. Definitely would be an amazing add in for oats.

The not so good: after the first couple of bites, it sort of lost its flavor, and just became sweet.

Lemon, Vanilla, and Cashew Clif Nectar Bar: 3.5 Bites

The good: the amazingly short list of ingredients. Short, all natural list. And the flavor? I'm usually wary of citrus flavored things, but this wasn't overpowering at all. Very light, and not too sweet - I liked it!

The not so good: I think I'm allergic to dates, and since that is one of the major ingredients, that's sort of a problem. My mouth was itching something awful afterwards. More my fault than the bar's. And, the bar was a little higher in the fat and sugar area than I would have liked.

These tasty muffins pack in a load of antioxidants from the dark chocolate as well as the creamy, rich taste of the avocado. Avocado is considered the world’s healthiest fruit because of its nutrient contents such as Vitamin K, dietary fiber, folic acid, Vitamin B6, Vitamin C and copper. Moreover, avocados provide us with ‘oleic acid,’ a monounsaturated fat that may help lower cholesterol. So, go ahead and dig in to these healthy, tasty muffins!

Ingredients

* 1 ripe avocado
* 1 1/2 cups whole wheat flour
* 1/2 cup melted dark chocolate
* 1/3 cup unsweetened coconut flakes
* 1 tsp baking powder
* 1 tsp baking soda
* 1 cup honey
* 3/4 cup almond milk (can also use soy milk, rice milk, hemp milk or coconut milk)
* 1/3 cup olive oil
* 2 tsp vanilla extract

Directions

* Pre-heat oven to 350 degrees.
* In a large bowl combine melted chocolate, vanilla, oil, milk, avocado and honey. Puree until smooth.
* In a separate bowl mix together flour, coconut flakes, baking soda and baking powder; mix well.
* Mix the avocado puree with the dry ingredients; mix well.
* Pour into muffin cups and bake for 20 minutes or until done.
* Enjoy!

This product is delicious!! Spicy!! It has a load of flavor. I would definitely buy this brand again. I always have a hard time finding a favorite condiment. So far I have Annies organic ketchup, Sunflower Kitchen Hummus, Annies Green Goddess Dressing, now Stubbs BBQ sauce. Definitely go try this.

Rachel's Cottage Cheese

As I have mentioned before, the primary reason I have not converted to an entirely vegan diet is cottage cheese. Although several tofu-based recipes for this animal product exist, I have never been quite satisfied with the results in their abilities to mimic this salty treat. I blame a certain Rachel for making my love of cottage cheese even greater.

In recent months, Rachel’s Dairy has begun producing individual cups of (sweet and savory) flavored cottage cheeses. I have grown to love these products for many reasons, but chief among them is that they have all the convenience of individual yogurt cups but without all the sugar or artificial sweeteners. In addition, as are all of Rachel’s products, these cottage cheese cups are made with milk from cows not treated with rBGH, otherwise known as bovine growth hormone. Ideally, I would prefer to consume only organic dairy, but I will settle for rBGH-free products.

All of Rachel’s cottage cheese products are made with 1.5% milkfat, and each cup contains 110-140 kcalories, 2 grams of fat (1.5 grams saturated), and 14-15 grams of protein. As mentioned above, these products are 50-75% lower in sugar than conventionally sweetened yogurts. As you might expect, the sweet varieties contain more sugar than the savory ones; the sweet flavors contain 10 grams versus the savory flavors’ 4-6 grams. Plus, each cup provides 200 mg of calcium (20% RDA). As with all cottage cheese, however, the sodium count is high–around 20% RDA for each serving.

The flavors:

-Pear Mangosteen:
* This is my favorite among the sweet varieties. * I am not entirely sure what a mangosteen is, but I like it…especially if it has anything to do with mango:)

-Pomegranate Orange Cranberry
* The pomegranate is sadly all but undetectable. * Still quite enjoyable; the cranberry flavor brilliantly shines through on your taste buds.

-Lemon Verbena Berry
* The most prominent flavor is “berry;” a little more lemon action would be preferable * I love how unique this variety is! As far as I know, few products feature “lemon verbena oil” among their ingredients.

-Sun-dried Tomato Pesto
* Given my recent discovery of pesto and all its tastiness, I was excited to try this…but its most prominent flavor is tomato. Good thing I love me some tomatoes too! * This would be easy to incorporate into Italian recipes such as lasagna or stuffed pastas.

-Cucumber Dill
* This flavor is my favorite among the savory varieties. * If you like tzaziki dip, you’ll love this–it might even be worth trying as a dip for pita.

-Roasted Red Pepper
* This flavor was the most difficult to locate in my area. I finally found it at a local Publix. * I loved how there were visible chunks of pepper mixed into this product.

Scrambled Tofu (Broccoli Hut)

Scrambled Tofu

Ingredients:
* non-stick cooking spray
* 1 garlic clove, chopped
* 1-2 cups of desired vegetables
* 3-6 oz. firm tofu, cubed or crumbled
* 1 T. low-sodium soy sauce
* 1 T. tahini
* 1 tsp. grated ginger
* 1/2 tsp. turmeric for color
* scallions, for garnish
1. Chop garlic and vegetables.
2. Heat a pan over medium heat, sprayed with non-stick cooking spray. Add garlic (and onions, if using).
3. Once garlic has begun to cook, add other vegetables.
4. Once vegetables have grown soft, add tofu cubes or crumbles to the pan. (Crumbling is way more fun). Stir to combine.
5. Add soy sauce. Stir until tofu crumbles are coated in soy sauce flavor.
6. Add ginger, tahini, and turmeric. Mix well so that turmeric is evenly distributed. This ensures an equal golden color throughout the dish.
7. Transfer the mixture to serving plate and top with scallions.
8. Serve with appropriate accompaniments (such as kombucha!).

Notes:
*I use cooking spray rather than olive oil in an effort to keep fat content moderate; with the tahini already in the dish, the scramble is plenty rich.
*Some of my favorite vegetables for scrambles include broccoli, onions, mushrooms, and asparagus. The amount is up to you–include as much or as little as you like.
*Beware that salsa does not pair well with the flavors in this dish.
*Again, the amount of tofu depends on your appetite. I typically use two 3 oz servings of tofu, or about 2/5 of a block.
* I prefer Arrowhead Mills Organic Sesame Tahini
